Have you ever baked with cassava flour?
⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ 
The first time I heard about cassava flour and honestly thought that it was the same thing as tapioca flour, only that they were known as a different name, like coriander and cilantro. 🤪
⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ 

What I found out was that both flours come from the same plant (Cassava), but the method of processing is different. 
⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ 

Cassava flour is produced by peeling, drying and grounding the whole root of the cassava plant, also called manioc, mandioca or juca. It’s an excellent gluten-free alternative for baking, and its high content in fibre makes it a great nutrient-dense option. 
⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ 
Tapioca flour, however, is produced by washing, pulping and squeezing the starch of the root to extract a starchy liquid which, once it evaporates, the tapioca powder remains.
⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ 

Once I knew what I was going to play with and researched some tips to cook with this new-to-me flour, which I shared on my blog today along with the recipe for these chocolate biscuits. 🍫

I do still need to play more with cassava flour to get better results but, so far, I’ve been quite thrilled with what I’ve achieved!

💛 NEW RECIPE! 💛 Want a quick and tasty midwe 💛 NEW RECIPE! 💛 Want a quick and tasty midweek meal? Try this couscous Moroccan style stew with chickpeas, spinach, feta cheese and dried apricots.
⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ 
INGREDIENTS:
⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ 
180 ml vegetable stock homemade or store-bought
120 g couscous
1 tbsp olive oil
1 onion medium, chopped
2 garlic clove thinly chopped
100 g tagine paste
40 g dried apricots chopped
1 cup tomato passata
2 tbsp cold water
160 g chickpeas cooked
1 handful baby spinach
100 g feta cheese crumbled
30 g almonds chopped
1 bunch fresh parsley roughly chopped
⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ 
INSTRUCTIONS:
⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ 
1. Bring the vegetable stock to a boil, when boiling, remove from the heat, stir in the couscous, cover with a lid and set aside for 8-10 mins or until ready to serve.
2. Meanwhile, heat the olive oil in a large frying pan on medium-high heat. Add the onion and cook for 4-5 mins or until softened. Then add the garlic, tagine paste and dried apricots. Cook for a further 1 minute.
3. Stir in the passata, 2 tbsp of water and season with salt and pepper. Stir in the chickpeas and simmer for 4-5 minutes or until the sauce has thickened slightly. Add the spinach and cook until wilted.
4. In the meantime, fluff up the couscous with a fork and stir through a drizzle of olive oil and half the parsley. Season with salt and pepper if need it. Serve the couscous in bowls, spoon the stew on top and finish with the feta, chopped almonds and the remaining parsley. Enjoy!
